Grapes: Castelão
Sparkling wine made using the traditional method. The base wine was produced with temperature control.
Inoculated with selected yeasts specific for sparkling wine production. Fermented in a cold chamber for 3 months. Aged in a bottle until disgorgement for at least 12 months.
Tasting Notes: Ruby red color with violet hues, fine and persistent bubbles. Intense aroma of red fruits. Quite fruity on the palate, with a body that has well-present tannins that give it spirit and personality.
Pairs very well with, in addition to suckling pig, fish and grilled meat in the oven. Should be served between 8°C-10°C.
